Vinsanto Occhio di Pernice
Crafted from a meticulous selection of the finest Sangiovese grapes, our Vinsanto Occhio di Pernice represents one of the most precious expressions of Tuscan winemaking tradition.
The grapes are naturally dried on traditional racks in a well-ventilated environment, while a minimum of three years of ageing in small wooden barrels gives rise to an intense and enveloping wine, distinguished by remarkable aromatic complexity and a perfect balance between sweetness and freshness. On the nose and palate, elegant notes of candied fruit, spices and dried fruit unfold gracefully, enhancing its depth, richness and persistence.
Only a few hundred bottles are produced each year, making it one of the rarest and most sought-after labels in our collection.

Nose: complex, with notes of dried and candied fruit, complemented by hints of honey, almonds and hazelnuts.
Flavour: rich and enveloping, with sweetness beautifully balanced by freshness and savoury minerality, leading to a long and persistent finish.
Pairing
An ideal companion to traditional biscuits, homemade cakes and cantucci. It also pairs beautifully with blue cheeses and aged pecorino cheeses. An excellent meditation wine.
